Mix flour, salt, water, and a little olive oil into a smooth dough for the flatbread base.
In a bowl combine the flour and salt, then stir in the water and a small splash of olive oil until a soft dough forms.
Knead the dough on a lightly floured surface until smooth and elastic, then let it rest briefly.
Divide the dough and roll each piece into a thin round or oval flatbread.
Heat a skillet over medium heat with a thin film of olive oil, then cook each flatbread on both sides until puffed and golden in spots.
Season the warm flatbreads lightly with salt and black pepper before serving.
