Preheat oven to 200C/400F and line a small baking tray with parchment paper.
In a bowl, toss the chickpeas with olive oil until evenly coated.
Add soy sauce and minced garlic to the chickpeas and mix well so all chickpeas are coated.
Spread the chickpeas in a single layer on the tray and roast for 15 minutes, shaking the tray halfway through, until lightly crisp.
Let the chickpeas cool for a few minutes on the tray; they will crisp up further as they cool. Serve warm or at room temperature.
