Preheat the oven to 190°C / 375°F.
Mix Quinoa, Zucchini, Vegetable broth, Garlic, Cooking oil, Salt, and Black Pepper in a baking dish.
Cover and bake at 190°C / 375°F for 26 minutes.
Add Fresh salmon and Lemon Juice, then bake uncovered at 190°C / 375°F for 12 minutes until the salmon flakes.
