Prepare and cook the sauerkraut and eggs together in a pan until the eggs are just set, then serve immediately.
Crack the eggs into a bowl and beat until the yolks and whites are fully combined, then season lightly with salt and black pepper.
Place a nonstick pan over medium heat and add a splash of olive oil, allowing it to warm before adding any ingredients.
Add the sauerkraut to the pan and cook while stirring until heated through and most excess moisture has evaporated.
Pour the beaten eggs over the sauerkraut and gently stir and fold until the eggs are softly set and cooked to your liking.
Taste and adjust seasoning with more salt and black pepper if needed, then serve the sauerkraut and eggs hot.
