Peel and cube the potatoes into small, even pieces, then finely chop the onion and mince the garlic.
Heat a splash of olive oil in a skillet over medium heat, then add the onion and cook until it softens and turns translucent.
Stir in the garlic and cook briefly until fragrant, then add the cubed potatoes and toss to coat them in the oil and aromatics.
Cover the skillet and cook the potatoes over medium heat, stirring occasionally, until they are just tender and starting to brown.
Add the sauerkraut to the skillet, stir to combine with the potatoes, and cook uncovered until everything is heated through and some edges are lightly browned.
Season the skillet with salt and black pepper to taste, stir well, and serve hot.
