Prepare all ingredients by chopping the vegetables, cutting the meat, and draining the sauerkraut before you start cooking.
Heat a splash of olive oil in a pot over medium heat, add the onion and garlic, and cook while stirring until softened and lightly golden.
Add the pork shoulder and smoked sausage to the pot and cook, stirring, until the meat is lightly browned on the outside.
Stir in the carrot and potato and cook briefly, then add the sauerkraut, bay leaves, and black peppercorns and mix well.
Pour in enough water to cover the ingredients, bring to a gentle boil, then reduce the heat and simmer until the meat and vegetables are tender and the flavors have blended.
Season the soup with salt, ground black pepper, and dried marjoram, then simmer a little longer and adjust the seasoning to taste before serving.
