Prepare all ingredients by slicing the mushrooms and mincing the garlic.
Heat the vegetable oil in a medium skillet over medium-high heat until hot.
Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown, 5–6 minutes.
Stir in the minced garlic and cook until fragrant, about 30 seconds, being careful not to burn it.
Pour in the soy sauce, toss to coat the mushrooms, and cook until the liquid slightly reduces and glazes the mushrooms, 1–2 minutes.
Season with black pepper and a pinch of salt if needed, toss once more, and serve immediately.
