Slice the green onion, keeping the white and green parts separate. Cook the udon according to the package directions and drain.
Heat the cooking oil in a skillet, add the white parts of the green onion, and fry until fragrant and lightly golden, 4 minutes. Stir in the soy sauce and sugar and cook 30 seconds more.
