Heat olive oil in a pan over medium heat, then cook onion and bell pepper until softened.
Add garlic, paprika, and cumin if using, and stir briefly until fragrant.
Add tomatoes and simmer until the sauce thickens slightly.

Cover and cook until the egg whites are set and the yolks are cooked to your liking.
