In a small saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until evenly combined.
Gradually whisk in the milk, a little at a time, until the mixture is smooth with no dry lumps.
Place the saucepan over medium heat and cook, whisking constantly, until the pudding thickens and just begins to bubble, 5–7 minutes.
Remove from heat, then whisk in the chopped chocolate (if using), vanilla extract, and butter until fully melted and smooth.
Pour the pudding into a serving dish, press plastic wrap directly onto the surface to prevent a skin if desired, and chill until set, about 1–2 hours.
