Prepare a simple French vinaigrette and toss it with fresh mixed greens just before serving.
In a small bowl, whisk together the red wine vinegar, Dijon mustard, salt, and black pepper until the salt is dissolved.
Slowly whisk in the extra-virgin olive oil until the vinaigrette is emulsified and slightly thickened.
If using, stir the finely minced shallot into the vinaigrette and let sit for a minute to mellow.
Place the mixed salad greens in a large bowl, drizzle with just enough vinaigrette to lightly coat, and gently toss with clean hands.
Taste and adjust seasoning with a little more salt or pepper if needed, then serve the salad immediately.
