12 gDried Apricots
6 gRaisins
1.25 cupsWater
1 tspHoney
Rinse all the pitted dried prunes, dried apricots and raisins under running tap water. Put all the fruit in a very small saucepan with all the measured water. Bring just to a boil, then reduce to a very gentle simmer.
Cover and simmer gently for 30 minutes until the fruit is soft and the liquid is naturally amber-brown. Keep the lid on to limit evaporation and avoid a rolling boil that breaks up the fruit.
Remove from the heat and leave covered for 60 minutes to infuse and cool. Keep all the fruit and infusion together.
Stir all the honey into the cooled warm infusion until dissolved. Pour the entire drink and all the softened fruit into one 350 ml mug or wide glass and serve with a teaspoon for eating the fruit. The whole drink and fruit together are one portion. Do not discard or puree the fruit; no extra sugar, lemon, spices or other accompaniments are included.
