35 gCream
70 gSweet Chestnut
12 gSugar
2 gCocoa powder
0.3 mlVanilla Extract
Chop all the already roasted peeled chestnuts finely. Put them in a very small heavy saucepan with all the milk and 10 g sugar. Cover and simmer over the lowest heat for 15-20 minutes, stirring often, until the chestnut pieces crush easily. Keep the lid on between stirring and do not let the milk boil dry; lower the heat if needed. Retain all the milk and chestnuts.
Remove from the heat and mash all the chestnuts with their milk. Stir in all the sifted cocoa and vanilla. Press every bit through a fine sieve with a spoon to make a smooth paste; work until no chestnut pieces remain in the sieve. If too loose to hold a mound, return all the paste to low heat and stir for 2-4 minutes until thick. Cool for 10 minutes, cover and refrigerate for 30 minutes until cold and firm but pressable.
In a narrow chilled cup, whip all the cold cream with the remaining 2 g sugar using a small whisk until it holds soft peaks. Do not beat into butter. Spoon one third of the whipped cream into the center of one small dessert bowl. Keep the rest cold.
Using a potato ricer with medium holes, press all the cold chestnut paste into loose vermicelli over the cream to make one small mound; scrape out and include every bit. Spoon all the remaining whipped cream on top like a snowy peak. Serve the entire dessert immediately as one portion, or keep covered in the refrigerator until serving. Rum, cake, meringue, chocolate shavings, candied chestnuts and extra sugar are not included.
