Beat eggs with salt and black pepper until foamy.
Cook garlic and spinach in butter for 3 minutes.
Spread eggs onto a lined tray and scatter spinach, tomato, and mozzarella over the top.
Bake at 180°C / 350°F for 14 minutes until just set.
Roll the warm souffle sheet into a log and slice.
