Wilt spinach in butter for 2 minutes, then cool slightly.
Whisk eggs, flour, sour cream, salt, and black pepper into a smooth batter.
Fold in spinach and mozzarella, then pour into a buttered baking dish.
Bake at 180C / 356F for 28 minutes until puffed and set.
Cook tomatoes and onion for 8 minutes into a chunky relish and spoon over the strata.
