Mix flour, eggs, water, and salt into a soft dumpling dough.
Rest dough for 15 minutes.
Cook garlic and spinach in butter for 3 minutes.
Pinch dough into small dumplings.
Boil dumplings in salted water for 4 minutes.
Toss dumplings with spinach, sour cream, mozzarella, and black pepper.
Bake at 190°C / 375°F for 14 minutes.
