Boil pasta in salted water for 8 minutes until just tender.
Wilt spinach in butter for 3 minutes and season with black pepper.
Whisk sour cream with eggs and a pinch of salt.
Combine pasta, spinach, custard, and half the mozzarella in a baking dish.
Top with remaining mozzarella and bake at 190C / 374F for 25 minutes.
