Cut the mushrooms into pieces and slice the onion thinly.
Heat cooking oil in a pan and fry the mushrooms and onion over high heat until browned and aromatic, seasoning with salt and black pepper.
In a bowl mix Greek yogurt, grated parmesan and mustard until smooth.
Toast the bread until crisp.
Spread the yogurt parmesan cream over the toast and top with the hot mushrooms and onions.
