Preheat the oven to 200°C / 400°F.
Toss Eggplant and Tofu with Cooking oil, Garlic, Salt, and Black Pepper in a baking dish.
Roast at 200°C / 400°F for 18 minutes.
Add Tomato Sauce, top with Mozzarella cheese, and bake for 14 minutes more.
