Cook the rice with 150 ml coconut milk, water, and salt for 18 minutes.
Season the white fish with salt, black pepper, and lime juice.
Cook onion, bell pepper, and garlic in cooking oil for 5 minutes.
Add tomatoes and the remaining coconut milk; simmer for 7 minutes.
Nestle in the fish and simmer for 8 minutes, then serve with coconut rice.
