Ensure the cooked rice is warm enough to stick together easily for shaping.
Wet your hands and rub with a pinch of salt to prevent sticking, then shape the warm rice into triangles.
Mix the soy sauce and melted butter together in a small bowl.
Heat a splash of oil in a non-stick skillet over medium heat.
Place the rice balls in the pan and grill until the bottom is crispy and golden.
Flip the rice balls, brush the tops with the soy-butter glaze and season with black pepper.
Flip again and grill briefly to caramelize the sauce, then repeat for the other side.
Remove from heat and garnish with sesame seeds before serving.
