Peel the zucchini, remove the seeds if needed, dice it, and prepare the onion, carrot, tomatoes, and parsley.
Saute the onion and carrot in vegetable oil until golden.
Add the tomatoes, parsley, salt, and black pepper, then simmer until softened.
